Great news for mushroom lovers! Research from the Agricultural Research Service found that white button mushrooms are the way to go when it comes to immune function.
The study was conducted by nutritional immunologists Simin Meydani and Dayong Wu at the Jean Mayer USDA Human Nutrition Research Center of Aging at Tufts University.
The study found that mushrooms seem to promote immune health by increasing the production of antiviral proteins and other beneficial cells during times of cell protection and tissue repair. Mushroom presence in the body enhances the maturity of dendritic cells from the bone marrow.
What’s a Dendritic Cell?
Dendritic cells make white blood cells that can identify and destroy unwelcome intruders in the body. These cells are especially important during times of bacteria occupancy. When more and more intruders enter, the body reciprocates by increasing the number of immune system cells. In order to make these cells, you need to consume appropriate nutrients. That is where our friend the mushroom comes into play! Lucky for us, white button mushrooms are the mushroom of choice in the United States, representing 90% of all mushroom consumption.
Some individuals have the idea that most white foods are bad for you. This study can help open the eye’s of those individuals, noting that a white mushroom does not compare to a slice of white bread. Mushrooms have no cholesterol and help burn the cholesterol you have in your body on consumption. They contain numerous vitamins and minerals, lots of water, fiber, calcium, iron and potassium. Also, for vegetarians who don’t obtain their selenium from animal proteins, they can instead rely on mushrooms as a source.
