There was a time not so long ago when dietitians would tell people to “go green” and it meant eating more vegetables! While that’s still true… going green these days has a whole new meaning – and it’s not just from tree huggers and environmentalists! I’m talking about the “low carbon” diet, which is basically about minimizing that carbon footprint when it comes to food intake. (this one’s for you, Clint!)
Cheryl Forberg is on my short list of nutrition expert idols. I hope to be able to make as big of an impact on people’s lives as she has been able to do. (She is the dietitian for The Biggest Loser after all!) Not only that, she writes book, counsels clients, and keeps a great blog updated several times a week. It’s amazing how much going green can be incorporated into your everyday eating habits.
