Chicken Souvlaki With Tzatziki Sauce and Warm Pita Chips

chickensouvlaki.jpgTravel to the mediterranian and enjoy this healthy meal. This is one of those recipes that sounds difficult but is so easy to do. If you are throwing a party it is an excellent appetizer or serve it as a meal! Serves 4

Chicken Souvlaki

- 2 boneless skinless chicken breast, cut into thin strips (4 strips per breast)

- combine 2 tbsp oregano, 1-2 cloves crushed garlic, 1/4 c white wine vinegar and 1 tpsp olive oil

- marinate chicken overnight or 4-6 hours and make tziki sauce (recipe below) so the flavors can combine

- remove chicken from marinade

- skewer with wooden or metal skewers (wooden will need soaked in water)

- bake at 300 degrees for 20 minutes or until cooked through

- remove and set aside

- serving ideas: with sliced tomato, cucumber, red onion, feta and warm pita triangles (recipe below)

Tzatziki Sauce (cucumber sauce)

- peel, seed and grate 1/2 cucumber (English cucumber works best) into a bowl

- add 1/2 C sour cream (light or full fat since you don’t use that much)

- add 1 tsp salt, 1 t powdered garlic

- stir to combine and chill

Warm pita chips

- slice whole pita into six triangles

- spray with olive oil mister to lightly coat

- lightly sprinkle salt and garlic powder over triangles

- cook at 300 degrees for 10-15 minutes (idea: put them in half way through the chicken cooking time)

- remove and serve warm
